Grant Achatz’s Aviary bar to have Las Vegas Strip residency run

We know why the caged bird sings: cocktails.

The Aviary, the cocktail bar from celebrated chef Grant Achatz, known for wet work that showcases theatrical presentations and offbeat ingredients, is popping up in May at The Vault in Bellagio. The Aviary joins Achatz’s Alinea, the Michelin-starred Chicago restaurant that is marking the last stop on its 20th anniversary tour with a residency from April 16 through May 31 at Michael Mina in Bellagio.

The Aviary is offering three signature cocktails paired with bites. These cocktails might include The Porthole, Jungle Bird, VacPot and Hermoso.

“This is truly a full circle moment for me,” MGM Resorts executive director of beverage Craig Schoettler said in a Friday statement. “I worked at Alinea and The Aviary 18 years ago, where I learned a great deal from Chef Achatz about the culinary and beverage industry and how to level up by pushing boundaries and executing at a high level.”

The Aviary will be open Wednesdays through Sundays in May. Cost: $175. Reservations: exploretock.com/alinea-las-vegas-bellagio. A limited à la carte menu featuring classic Aviary cocktails, along with The Vault’s regular menu, will also be available for walk-in guests.
