The Hat to begin hiring for its 1st Las Vegas location

The time of pastrami draws nigh.

The Hat, the 75-year-old Southern California restaurant famed for it pastrami dip sandwiches, has begun hiring in advance of its highly anticipated arrival in Las Vegas. The Hat announced on its Instagram (@thehatworldfamous) that it is accepting walk-in applications for assistant managers, cashiers and line cooks from 10 a.m. to 4 p.m. Wednesday through Saturday at the restaurant, 6215 S. Rainbow Blvd.

Hiring and training staff are typically among the final phases before a new restaurant opens. As Neon reported last month, signs are up and construction well underway on the first Hat restaurant in Vegas and the brand’s first location outside of California. Enormous online enthusiasm followed when Neon broke the news in June that The Hat would be setting up shop in Vegas.

Today, besides its signature dish, the menu offers pastrami burgers and pastrami chili cheese fries, hot sandwiches like tuna melts and roast beef, cold sandwiches like tuna and turkey, plus burgers, hot dogs, chili dogs and sides.

Six years ago, word emerged that The Hat was going to open on the same South Rainbow Boulevard site, but that project was never completed. The restaurant began in 1951 as a roadside stand in Alhambra, California, serving pastrami dip sandwiches. Today, there are 11 locations in Southern California.
